In the 1920’s, bootleggers used honey and lemon juice to disguise the raw juniper taste and smell of the bathtub gin in this classic Prohibition cocktail. It goes down smooth and can turn an ardent “non-gin drinker” into a Bees Knees drinker.
1 oz. Death’s Door Gin
1 oz. fresh lemon juice
2 oz. honey syrup (3 parts honey to 1 part hot water until honey dissolves)
In cocktail shaker, combine 2 oz. of honey syrup, gin, lemon juice and ice cubes, Shake well. Strain into coupe glass and serve up or on the rocks. Garnish with lemon.
