It has been less than eighteen months since something seaside and sensational arrived on the island. Across its 80 year history, The King and Prince Beach & Golf Resort has nearly always had a restaurant, but never anything like ECHO.
Presenting a place “like nothing else on the island” is precisely what the resort owners and management team envisioned and created, says Allen Lancaster, the resort’s Director of Food & Beverage. “St. Simons had no room for another average restaurant, but definitely had room at the top for a great restaurant. And that’s what ECHO is to our resort guests and our loyal following of local residents.”
Not only does ECHO serve three meals daily, as Lancaster points out, there is also a focus on terrific, seasonal menus. “ECHO is a unique experience for St. Simons. From an oceanfront lunch inside or under an umbrella, to relaxed seating for dinner. From the humming energy of our large, two-sided bar to sharing appetizers and enjoying live music. That’s the appeal and essence of ECHO. You can be as upbeat or as relaxed as you want. We’re here to make ECHO fun, flavorful and memorable.”
ECHO’s various seating options are great for a variety of events – from family night dinners to game day brunches, or even snack breaks on a beach day. Inside, the expansive windows offer panoramic beach and ocean views. Sea breezes add to the pleasure of an open-air table on the patio.

Meet the Man Behind the Menus
Chef James Flack’s skilled culinary touch is wonderfully delicate and deft. He muses over every detail that goes into the numerous dishes that are created in his kitchen. As the quintessential coastal Georgia resort, The King and Prince has in Flack a chef whose Southern roots and repertoire run deep. “My love lies in creating Southern classics with a twist,” says Chef Flack. Tasting his Surf & Turf Kabobs, with saffron poached lobster, filet tips, and roasted vegetables, brings a flavorful understanding of his passion.
Chef Flack is indeed a local talent, growing up on Jekyll Island. Following his American Culinary Federation certification was formative work under the tutelage of top chefs at premier hotels and resorts. There, he sharpened his skills and deepened his love for a career in the kitchen.
With autumn’s arrival, Chef Flack has authored a fall menu perfectly in step with the season. “I remember my days as a child, eating at my grandmother’s house over the years, learning how foods must reflect the season,” he remembers. “I think of it as shifting from the watermelon seeds of summer to the pumpkin seeds of fall. Thus, our ECHO menus move away from lighter mixed summer vegetables to deeper hued, root vegetables; a shift from the cool of watermelon gazpacho to the warmth of chowder.
The fall lunch and dinner menus at ECHO are a thoughtful mix of guest favorites and new creations. At lunch, the popular Seared Tuna (fresh and cooked on an iron skillet), the ECHO Sampler (Shrimp and Grits, Southern Pimento Cheese Hummus, and Crab Cake) and the Jamaican Jerk Shrimp Flatbread are joined by the new and tempting wonders of a Crab Cake and Foie Gras BLT. For dinner, Chef Flack has added three new sensations: Salmon Sous Vide (wild caught), Pan Seared Sea Scallops (with cranberry faro), and Springer Mountain French Breast of Chicken (organic, free-range). “The ECHO team is proud to share its new menu,” says Chef Flack.

Shaken, Not Stirred
Complementing the cuisine at ECHO is a bounty of beverages including craft beers, wines (classics and those hard to find) and specialty cocktails. “Our craft beer taps constantly rotate to give guests the chance to taste something new,” says Tanner Rogers, Restaurant Manager.
“Our focus is on Georgia breweries and the latest IPAs. We’re always looking for new additions to our beer choices. As the ECHO seasonal food menus change, so does our menu of specialty and signature cocktails.”
Rogers is especially proud of the depth of the ECHO wine cellar. “We offer more than 75 wines with 40 of these available by the glass. Our cellar is heavy with New World wines with a mixture of well-known and rare varietals.” The ECHO team invites everyone to enjoy the daily Happy Hour at ECHO, from 4:00-7:00 p.m. daily, featuring $4 house wines, well cocktails and draft beers.
