Located in Harrodsburg, Kentucky, the Beaumont Inn is surrounded by rolling hills of bluegrass, horse farms, antebellum homesteads and well-known bourbon distilleries. The inn celebrated its 100th anniversary and five generations of family inn-keeping in 2019. This corn pudding is a regional favorite and is one of Beaumont Inn’s most often requested recipes. It’s a true Derby Day classic.

Beaumont Inn’s Famous Corn Pudding
Ingredients:
2 c. white whole kernel corn, or fresh corn, cut off the cob
4 eggs
8 level Tbsp. flour
1 qt. milk
4 rounded tsp. sugar
4 Tbsp. butter, melted
1 tsp. salt
Preparation:
Stir together corn, flour, salt, sugar, and butter. Beat eggs well; add them to milk, then stir into corn mixture and pour into a greased 8” x 8” pan or Pyrex dish. Bake in oven at 450° for about 40-45 minutes. Stir vigorously with long prong fork three times, approximately 10 minutes apart while baking, disturbing the top as little as possible.
