Bourbon Pork Roast
Yield: 6-8 servings
Ingredients:
3-5 lb. pork roast
2 Tbsp. lemon juice
2 Tbsp. brown sugar
1 Tbsp. all-purpose flour
1 tsp. paprika
½ tsp. salt
½ c. water
¼ c. dry sherry
1 bay leaf
¼ c. bourbon
Black pepper
Preparation:
Preheat oven to 325°F. Place pork roast fat side up in roasting pan. Rub roast with lemon juice. Mix together brown sugar, flour, paprika and salt. Rub mixture onto roast. Sprinkle generously with black pepper. Combine water, sherry and half the bourbon and pour over roast. Add bay leaf to pan. Place roast in oven to cook for 35-45 minutes per lb. Baste heavily and often. After roasting for an hour, pour last half of the bourbon over roast. Continue to baste until you are ready to serve. Before serving the roast; let meat rest for 10-15 minutes before carving to allow juices to be evenly distributed throughout the meat.
