Grilled Banana Split Nachos
Banana Split Nachos
Ingredients:
1 c. thinly sliced strawberries
3 Tbsp. 100% pure fruit seedless strawberry jelly/jam
4-6 flour tortillas (Make using Flour Tortilla recipe or use pre-prepared)
All-natural nonstick cooking spray, olive oil, or melted butter to brush tortillas
1 Tbsp. granulated sugar
1/4 tsp. cinnamon
4 "planks" fresh pineapple (about 1/2 of a peeled, cored fresh pineapple, cut into sections lengthwise)
1 banana, unpeeled, cut crosswise and then lengthwise into 4 "planks"
1/4 c. mini chocolate chips or chocolate syrup
vanilla ice cream
Preparation:
Make sure grill is clean and preheated to medium heat. In a small bowl, stir together strawberries and jelly. Set aside. Combine sugar and cinnamon in a ziploc bag and shake. Lightly spray both sides of each tortilla with cooking spray or brush with oil/melted butter. Sprinkle each side with cinnamon & sugar mixture, using your fingers to lightly rub the sugar and cinnamon to distribute them evenly on tortillas. Grill tortillas over medium heat for about 1-2 minutes per side, just until they begin to turn golden brown and grill marks form. Remove tortillas to cutting board and IMMEDIATELY cut them into triangular chips. The chips will continue to get crispier as they sit. Set chips aside. Place pineapple "planks" crosswise on grill grates and close the lid. Turn pineapple occasionally to develop grill marks on all sides. Grill a total of 8-10 minutes.During last few minutes of grilling, add unpeeled bananas to the grill, peel side up and crosswise on grates. Grill bananas on flesh side only, just until gently warmed with sear marks. If you grill too long they’ll begin to get hot and mushy. Remove fruit from grill, and, when cool enough to handle, peel bananas and cut fruit into thin slices. Layer nacho chips, strawberry sauce, grilled fruit slices, and chocolate chips or drizzle of chocolate syrup. Top with a scoop of vanilla ice cream and serve.
