The recipe for Cioppino, a hearty and delicious seafood stew, was prepared for and provided exclusively to Elegant Island Living by JMac's Island Restaurant.
1/4 sliced onion
1/2 red bell pepper, sliced
6 asparagus tips
1/4 c. corn, sliced off cob
6-12 oz. chicken stock or fish stock
6-12 oz. tomato sauce
2 cloves garlic, finely diced
Salt and pepper to taste
7-8 oz. white, flaky fish filet (grouper, snapper, flounder)
2 Georgia white shrimp
(**Seafood can be changed to your liking.)
Directions: Sauté onions and peppers in a medium sauce pan until slightly soft (about 5 min). Add garlic, salt and pepper and sauté for about one more minute. Add 6 oz. chicken stock, 6 oz. tomato sauce, corn and asparagus tips. Bring to a simmer. Add mussels and shrimp. Cover. Simmer until mussels open (about 3-5 minutes). Add more chicken stock and tomato sauce to taste. While sauce is cooking, season fish filet with salt and pepper, heat sauce pan and sauté fish. When sauce is done, pour in a bowl, add filet of fish and enjoy!
