COCONUT RICE
2 tsp. unsalted butter
2 tsp. fresh ginger, minced
1 clove garlic, minced
1 stick cinnamon (approx. 3")
1 c. uncooked jasmine rice
¾ c. water
¾ c. light coconut milk
1 tsp. sugar
½ tsp. salt
¼ tsp. grated lime zest
⅛ tsp. ground white pepper
Preparation
Melt butter in saucepan over medium heat. Add ginger, garlic, and cinnamon stick; sauté until fragrant, about 1 minute. Stir in rice; sauté until rice grains are opaque, about 2 minutes. Stir in water, coconut milk, sugar, salt, lime zest, and pepper; bring to a simmer. Stir once, cover, reduce heat to low, and simmer for 15 minutes. Remove cinnamon stick. Fluff rice with a fork, cover, and let rest for 5 minutes. Serve.
