Meet the GM: ALEX FLORES
BIO:
“Work restlessly. Lead humbly. Serve exceptionally.” That is the mantra of this Glynn Academy grad who started work as a server/food runner 13 years ago. After a year of college, Alex decided it wasn’t the right fit for him and he wanted to work. That dedication and drive have never let up, and Alex’s work ethic earned him the General Manager spot in 2018. He’s proud of his role in helping to grow Bubba’s, both as a restaurant and a brand, and creating memorable experiences for guests.
Teamwork and the spirit of family are at the heart of everything Alex does. From growing up playing soccer his whole life to then coaching soccer for 10 years while working his way up the Bubba's ladder, to now running both Bubba's locations--building and keeping a team together has always been a part of Alex's life. Being a leader for so long helped make the transition into restaurant management seamless.

HIS MISSION:
Alex emphasizes that fostering positive relationships within the community and among the staff is just as important as making sure guests are happy. This culture of connection can be seen in the enthusiasm and longevity of the staff—like head chef Miguel, who has deep roots in the Bubba’s kitchen, and serves up old favorites and new specialties with consistency—and the guests who keep coming back time after time.

HIS PASSION:
“One of my biggest passions is catering. From weddings and corporate events to private parties and large community gatherings, I enjoy working with clients to bring their vision to life and making sure that every event is executed flawlessly.” No matter what the occasion, and whether the party is big or small, Bubba’s can bring the party to you with taco and fajita bars—and their signature margaritas too!

THE VIBE:
Whether you’re visiting Bubba Garcia’s flagship cantina on St. Simons or the new location in Historic Downtown Brunswick, the vibe is fun, laid back, and energetic. Alex says,
“At the end of the day, restaurants are about the people, and we have created a place where both guests and staff feel welcome and leave happier than when they came.”
From a girls’ Sunday brunch with live music and margaritas or a Taco Tuesday dinner with the kids to late night beer and billiards with buddies at Bubba’s Up or special events like the recent World Cup watch parties, Bubba’s is a gathering place with open arms for everyone.
Tacos & Tequila - Bubba's Staples
THE FOOD & DRINK:
Bubba’s food is bold, fresh, and full of flavor.
“We take classic Mexican favorites and make them our own with quality ingredients, generous portions, and dishes that are both comforting and exciting,” explains Alex.
Aside from the margaritas, a few of the most popular items on the menu are the Cali club and carne asada tacos, and the build-your-own burrito or bowl.
Noteworthy! The tequila selection at Bubba’s in Brunswick is the largest in Glynn County!
Want to try something new? The smashburger taco and “beeria” (Modelo beer, to be specific) tacos are both big hits, and among Alex’ personal favorites. And don’t forget about weekend brunch complete with endless Bloody Mary and mimosa bar! While the breakfast burrito and hangover bowl are crowd-pleasers, there’s Southern classic chicken and waffles too.
