Ham & Cheese Croissant Bake

Ham & Cheese Croissant Bake
Ingredients:
3 large croissants
8 oz. chopped cooked ham
1 c. shredded Swiss cheese
1 c. shredded sharp cheddar cheese
6 eggs
1 c. half-and-half
1 Tbsp. ground mustard
1/2 tsp. honey
1/2 tsp. kosher salt
1/2 tsp. ground pepper
fresh chopped chives or parsley to garnish
Preparation:
Prepare a 2 qt. baking dish or 10-inch deep-dish glass pie plate by spraying with cooking spray. Cut croissants in half lengthwise (as if making a sandwich), then cut each half into 4-5 pieces. Place half of the pieces in baking dish. Sprinkle with ham, and half of the combined shredded cheese. Top this layer with remaining croissant pieces, tearing into additional pieces if needed so they fit snugly. In large bowl, beat eggs and all remaining ingredients together with a whisk. Pour egg mixture over croissant mixture and gently press croissant pieces into egg mixture to moisten completely. Cover tightly with aluminum foil and refrigerate for at least 8, but no longer than 24, hours. When ready to bake, pre-heat oven to 350°F, cover casserole with remaining half of the combined shredded cheese and sprinkle with chopped chives or parsley, if desired. Bake uncovered 40-45 minutes or until knife inserted in center comes out clean. Casserole should be golden and puffy but will deflate slightly as it cools. Serve warm.
