Mint Julep Cupcakes
Ingredients
1 c. butter
2 c. sugar
1 tsp. vanilla extract
1 tsp. mint extract
4 eggs
2¾ c. flour
3 tsp. baking powder
1 tsp. salt
1 c. milk
1 c. Kentucky bourbon (plus extra)
For frosting
1 c. butter (softened)
4-6 c. confectioners sugar
1/2 tsp. mint extract
1 Tbsp. Kentucky bourbon
1/4 c. whole milk
Mint leaves to garnish
Preparation
Place liners in 24 cupcake tins and set aside. Preheat oven to 350ºF. In a small bowl, combine salt, baking powder, and 1¾ c. flour. In a large mixing bowl, beat butter, sugar, eggs, and extracts until creamy. Gradually stir in flour mixture until just combined. Add milk and bourbon, then stir in remaining 1c. flour. Be careful not to overmix. Pour batter into cupcake tins, dividing evenly. Bake for 25-30 minutes, or until toothpick inserted in center comes out clean. Let cool. Once cool, pierce tops of each cake with a fork and brush tops with bourbon. For frosting: Whip butter until creamy and pale. Add confectioners sugar one cup at a time (you may not need all 6 cups) until it has a paste-like, thick texture. Add extract, bourbon, and milk one tablespoon at a time until consistency is thick and creamy. Adjust as needed with additional milk or confectioners sugar if frosting is too wet or dry. Pipe or swirl frosting onto cupcakes and garnish each with a mint leaf. Enjoy!
