SICILIAN STYLE CRACKED CRAB
2 cooked blue or Dungeness crabs, cleaned and cracked
¼ c. high quality extra virgin olive oil
2 lemons, juice only
4 cloves garlic, chopped fine
⅛ c. Italian flat leaf parsley, chopped
½ tsp. sea salt
¼ tsp. black pepper
¼ tsp. red pepper flakes
Preparation
Make marinade by mixing all ingredients, except crab, in a large bowl until thoroughly combined. Add cracked crab pieces to marinade and toss to coat all pieces well. Refrigerate and allow to marinate for at least an hour before serving. Serve as an appetizer or place atop greens and serve as a salad.
