Margarita Grilled Shrimp
Ingredients:
1 Tbsp. kosher salt
1 Tbsp. sugar
2 lbs White Georgia shrimp, uncooked, peeled and deveined
3 cloves garlic, chopped
1/3 c. cilantro, roughly chopped
1 jalapeño, chopped
1 Tbsp. lime zest
2 oz. tequila blanco
2 oz. triple sec
1/3 c. extra virgin olive oil
1/4 tsp. black pepper
lime wedges and chopped cilantro for garnish
Preparation:
In medium bowl, mix together salt and sugar, then add the shrimp. Turn well to coat and cover with plastic wrap and chill in refrigerator for one hour. Alternatively, let the shrimp stand in brine at room temperature for about 20 mins. In separate medium bowl, mix together garlic, cilantro, jalapeño, lime zest, tequila, triple sec, olive oil, and pepper. Transfer brined shrimp to a colander and rinse thoroughly with cool water to ensure they won’t be too salty. Pat dry and add to bowl with margarita marinade. Turn to coat, cover, and place in refrigerator for at least one hour (two, ideally). Heat grill to high, thread shrimp on skewers and grill for about 2-3 mins per side or until just cooked through, turning once. (Don’t overcook!) Squeeze some fresh lime juice over the shrimp. Garnish with cilantro and lime wedges. Serve with warm tortillas, Mexican or Spanish rice, and street corn. Perfect for Cinco de Mayo!
