No-Bake Éclair Squares
Ingredients:
1 pkg. (3.4 oz.) vanilla instant pudding
2 c. cold milk, divided
1 tub (8 oz.) frozen whipped topping, thawed
22 graham crackers (one package; use chocolate grahams for added chocolate flavor)
1 pkg. (4 oz.) Baker’s unsweetened chocolate
¼ c. butter
1½ c. confectioner’s sugar
Preparation:
Whisk together pudding mix and 1-3/4 c. milk in large bowl for 2 min. Stir in whipped topping. Layer about 1/3 of the grahams and half the pudding mixture in 13x9-inch pan, breaking grahams as necessary to fit; repeat layers. Top with remaining grahams. Microwave chocolate and butter in medium microwaveable bowl on high 1½ min., stirring after 1 minute. Stir until chocolate is completely melted and mixture is well blended. Add sugar and remaining milk; mix well. Spread over grahams. Refrigerate at least 4 hours before slicing and serving.
