mango relish
Ingredients:
1 large ripe mango, peeled and chopped
1 Serrano pepper, stem removed, finely chopped, including seeds
1 Tbsp. chopped fresh cilantro
1 Tbsp sugar
1 lime, juiced
1 tsp. olive oil
Kosher or sea salt to taste
Directions:
Combine mango, Serrano pepper, and cilantro. Combine sugar, lime juice, and olive oil and pour over mango mixture. Combine until well blended and the consistency of salsa. Add salt to taste. Allow relish to sit 1 hour before serving for flavors to develop.
Yields 2 cups
Use to accompany seafood or serve with crackers or tortilla chips as an appetizer.
