Ingredients:
6 red snapper fillets – 8 oz. (skin-on)
1 doz. Georgia white shrimp (shell on)
olive oil
salt and pepper
Directions:
In large sauté pan, add enough olive oil to coat bottom of pan. Pat dry fillets with napkin. Scour skin side of fillets with three small incisions. Wait until pan is fully hot and add fillets skin side down. Cook until golden, 2-3 min., then flip and cook 2-3 minutes on other side. Place on napkin when finished to drain off excess oil. Wipe pan clean and add enough olive oil to coat pan again and repeat process for shrimp, but only cooking 1 1/2 min. on each side.
For Cheese Grits:
Ingredients:
1 c. Logan Turnpike Mill Old Fashioned Yellow Grits
2 c. chicken stock
2 c. heavy cream
1 c. Georgia Red cheese
1/2 c. Pecorino Romano Cheese
Freshly ground black pepper
Kosher salt
Directions:
Bring chicken stock and heavy cream to a boil in medium-heavy saucepan. Stir in grits and reduce heat to simmer. Whisk frequently as the grits begin to thicken, cook grits until thick and creamy, about 30-45 minutes. Add cheese and whisk together, adding cream for desired consistency. Adjust seasoning with salt and pepper.
For Corn Maque Choux:
Ingredients:
1 small Vidalia red onion, diced 1/4”
1/4 c. red and green bell pepper, diced 1/4”
1/4 lb. andouille sausage, diced
2 Tbsp. olive oil
3 c. shoepeg corn
2 plum tomatoes, diced 1/4"
1/4 c. sliced green onions
1 doz. fresh thyme sprigs
1/2 c. heavy cream
1/4 c. chicken stock
Salt and pepper
Directions:
In large skillet over medium heat, sauté onion, garlic, bell pepper and sausage in olive oil until tender. Add thyme, stir and cook for 1 min. Add remaining items except green onions and cook for 15 min. on low to medium heat, stirring occasionally. To finish, stir in green onions and serve.
