Join us in raising a toast to the spirit of spring with this Peach Blossom Bellini. Let’s celebrate the blooming trees and effervescent life it brings with a light and bubbly sipper that embodies it all. For a non-alcoholic version, substitute sparking grape juice or sparkling cider for prosecco or champagne.
Peach Blossom Bellini
Ingredients:
For simple syrup
2 tea bags/infusers (or 3 tsp. loose) peach tea
1 c. water, near boiling
4 Tbsp. sugar
For cocktail
5 oz. prosecco or champagne
Preparation:
Make peach tea simple syrup using 2 tea bags/infusers (or 3 tsp. loose tea) of peach tea. (Recommended brands: Bigelow Perfect Peach, The Republic of Tea Peach Blossom Oolong or Ginger Peach, Harney & Sons Peach or White Peach). Steep tea in the near boiling water for 2-3 minutes. Remove tea bags/infusers or strain tea liquid from tea leaves, pouring into another cup. Add sugar and stir to dissolve. Chill an hour or until cold. Make the cocktail by adding 2 oz. simple syrup to a champagne flute. Top with prosecco or champagne. Garnish with peach blossom or peach slice and serve.
