Watermelon Salad
Amy Baldwin of Boulevard Café shares this refreshing summery salad recipe that is as pretty on the table as it is delicious to eat.
Watermelon Salad
Ingredients:
3 Tbsp. lime juice
2 Tbsp. olive oil
1 diced jalapeño (fresh, not canned or pickled)
1/2 thinly sliced red onion
4 c. watermelon, cut and de-seeded (shown: babydoll, sugarbaby, yellow-canary honeydew)
1/2 c. feta cheese
handful of arugula or spring mix
salt and/or sugar, to taste
Directions:
Whisk lime juice and oil together for dressing. Gently mix watermelon, onion, and jalapeño. Pour dressing over and toss gently. Add lettuce and feta and toss gently. Let sit and marinate for 10-15 minutes, then add salt and/or sugar, to taste. Serve.
