Low Country Deviled Eggs
Yield: 2 dozen
Ingredients:
12 large eggs, hard boiled
8 oz. lump crab, flaked
1 stalk celery, finely diced
1 green onion, finely chopped
1 tsp. yellow mustard
½ c. mayonnaise
Salt and pepper to taste
Old Bay seasoning
Preparation:
Slice eggs lengthwise. Remove yolks and mash in a bowl. Add celery, onion, mustard and mayo. Blend well. Fold in crab meat. Season to taste. Stuff egg whites. Garnish with light sprinkle of Old Bay. Refrigerate until ready to serve.
