Super Greens Salad with Lemon-Garlic Dressing
Yield: 6-8 servings
Ingredients:
For Dressing
1/2 c. olive oil
Juice of 2 lemons (about 1/4 c.)
2 cloves garlic, peeled and finely minced
2 tsp. Dijon mustard
1 tsp. kosher salt
For Salad
1 bunch collard greens, chopped
1 bunch kale, chopped
2 avocados, diced
4 carrots, sliced
4 large eggs, hard-boiled, chopped
2 ears corn, kernels removed from cob
1 pt. cherry tomatoes, sliced
1/2 c. Georgia pecans
6 strips bacon, cooked, crumbled
Preparation:
In a medium bowl, whisk together dressing ingredients. Refrigerate for an hour or more. In a large bowl, combine all remaining ingredients for salad. Toss with lemon-garlic dressing to coat before serving.
